Vanilla base with soft apple and pears and a nut crumble on top

Apple and Pear Cake
- 250 gr all purpose flour
- 110 gr granulated sugar
- 115 gr softened butter
- 2 large eggs beaten
- 30 gr vegetable oil
- 60 gr milk
- 2 large apples peeled and cored in dices
- 1 large pear peeled and cored in dices
- 1 tsp vanilla extract
- 1 lemon juice
- 1/2 tsp cinnamon powder (optional)
Pecan and walnut crumble
- 30 gr chopped pecan nuts
- 30 gr chopped walnuts
- 40 gr all purpose flour
- 50 gr brown sugar
- 30 gr softened butter
- 60 gr milk
Instructions
Before
- Make a stew with the apples and pears by cooking them together with the lemon juice in a saucepan until tender. You can also add the cinnamon here. Once the are done, set aside.
- Preheat the oven at 180C (350F);
- Prepare a square 9 inch mold by greasing it with butter.
For the nut crumble
- Mix together all the ingredients with your hands: flour, brown sugar, nuts and butter until the texture is crumbly;
- Set aside to assemble the cake.
Make the cake
- Cream together the butter with the sugar, you can either do it by hand with a spatula (harder) or using a stand mixer with the paddle attached (around 2 min) until the mixture is light in color and fluffy;
- Add the eggs one by one and mix well with each addition;
- Add the vanilla extract and the oil and mix well;
- Incorporate the flour and milk in a few steps and continue mixing until all comes as an homogeneous mixture.

- Pour the batter into the pan and take it to the oven about 20 min;
- After the time has passed remove from the oven and evenly spread the remaining apples and pears over the cake;
- On top of it spread the nut crumble;
- Take it to the oven for another 25 to 30 min
- Remove from the oven, wait for the cake to cool down a bit and un-mold and let it completely cool on a rack or enjoy it warm!!
