Healthy and delicious granola to start your day!
Ingredients
- 1 1/2 cups of oat flakes
- 1 cup of popped quinoa (can be replaced with more oat)
- 1 cup of shredded or flaked coconut
- 1 cup of mixed nuts coarsely chopped (see notes for some tips)
- 2 tbsp hemp hearts (optional)
- pinch of salt
- 80 gr vegetable neutral oil (I use canola)
- 1/4 cup honey or maple syrup
- 2 tbsp brown/raw sugar
- 1 tsp vanilla extract
- 1/2 cup of dried fruits
Instructions
- Preheat the oven to 160ºC (325F);
- Mix the oats, quinoa pops, nuts (check the notes section for some tips regarding some types of nuts), coconut, hemp hearts (if using) and salt in a bowl;
- In a medium bowl whisk oil, half of the honey (or syrup), sugar, and vanilla until well incorporated;
- Pour the liquids over the dry ingredients, mix well;
- Pour the mixture over a sheet pan and take to the oven for 15 min;
- After 15 min add the rest of the nuts (see notes!) and drizzle the rest of the honey syrup and mix everything again well;
- Leave another 15/20 min and take out of the oven and let it cool down a bit;
- Add dried fruits and mix;
- You can store it in an airtight container in a dry place for about a month!
Notes
- If you are using pistachios as a nut option, keep them separate and mix them when the preparation is halfway in the oven (so after ~20 min you put the granola in the oven)
- Fruit options could be: raisins, dried cranberries or blueberries, dried mango, pineapple, dehydrated apple or banana chips, dates, figs, you have lots of options!
