Healthy Breakfast Everything Granola

I recently had this crazy thoughts to start making everything at home. Probably not related at all to the fact that I spent almost all my time inside… 😛

In reality, I remember having these ideas before. When I was a child (don’t judge me :P), I’d daydream that when I grew up I would have my kitchen full of homemade cookies (no packaged ones) or bread. Then I grew up and I forgot that childish thoughts, but with all this pandemic I have been spending a lot of time inside which lead to cooking more and brought some those ideas back to my mind.

I am not really a huge fan of granola. I do eat cereals a lot, and yogurt. I am obsessed with nuts though, I buy tons of them to snack or add them to different preparations (bread, meals), and I was wondering how to incorporate them on breakfasts beside throwing a bunch in the bowl of yogurt. So I got this idea of making a batch of granola just to try, I am happy I did it, because it turned out great! And the best part is, you only need 3 or 4 basic ingredients, for the rest you can just use different kind of other ingredients, sorted nuts, seeds, dried fruits, chocolate chips and make different kinds of granola each time.

Healthy Breakfast Everything Granola

Healthy and delicious granola to start your day!

 


Ingredients

Scale
  • 1 1/2 cups of oat flakes
  • 1 cup of popped quinoa (can be replaced with more oat)
  • 1 cup of shredded or flaked coconut
  • 1 cup of mixed nuts coarsely chopped (see notes for some tips)
  • 2 tbsp hemp hearts (optional)
  • pinch of salt
  • 80 gr vegetable neutral oil (I use canola)
  • 1/4 cup honey or maple syrup
  • 2 tbsp brown/raw sugar
  • 1 tsp vanilla extract
  • 1/2 cup of dried fruits

Instructions

  1. Preheat the oven to 160ºC (325F);
  2. Mix the oats, quinoa pops, nuts (check the notes section for some tips regarding some types of nuts), coconut, hemp hearts (if using) and salt in a bowl;
  3. In a medium bowl whisk oil, half of the honey (or syrup), sugar, and vanilla until well incorporated;
  4. Pour the liquids over the dry ingredients, mix well;
  5. Pour the mixture over a sheet pan and take to the oven for 15 min;
  6. After 15 min add the rest of the nuts (see notes!) and drizzle the rest of the honey syrup and mix everything again well;
  7. Leave  another 15/20 min and take out of the oven and let it cool down a bit;
  8. Add dried fruits and mix;
  9. You can store it in an airtight container in a dry place for about a month!

Notes

  • If you are using pistachios as a nut option, keep them separate and mix them when the preparation is halfway in the oven (so after ~20 min you put the granola in the oven)
  • Fruit options could be: raisins, dried cranberries or blueberries, dried mango, pineapple, dehydrated apple or banana chips, dates, figs, you have lots of options!
