Fall Apple Crumble Cake

When I first arrived to Vancouver in 2016 it was beginning of November, one of the most rainiest Novembers in years people was saying. It was my first time in the city, a city to which I was moving to live at least for several months, I was alone without knowing almost anyone, and it was raining every single day. It felt a bit depressing to be honest. Fortunately, suddenly December came, and with it snowing started, and that quickly change my feelings of the city (hello Ski!). October and November are the worst months in this part of the world in my opinion: endless rain and gray days, shorter daylight and colder outside, the weather really sucks.

With the years I have started to like Fall time a bit more, and I have learnt to enjoy what it has to offer. I still don’t love the rain without much outdoor activities, but it’s a great time to bake and stay warm inside, decorate your home fall or halloween themed and enjoy fall flavours, and those so delicious warm or nutty desserts that are too heavy for summer…

If you have read me before, you know that I love fruits. During colder months it’s harder to crave on fruity desserts or pastries because they seem too cold and not body warming. But who does not think of a warm apple pie as a fall dessert? This is my version, base of vanilla cake, top of apple and pear and nut crumble. Make it yourself and tell me if there isn’t a heartier dessert!

Apple & Pear Crumble Cake

Description

Vanilla base with soft apple and pears and a nut crumble on top


Ingredients

Apple and Pear Cake

  • 250 gr all purpose flour
  • 110 gr granulated sugar
  • 115 gr softened butter
  • 2 large eggs beaten
  • 30 gr vegetable oil
  • 60 gr milk
  • 2 large apples peeled and cored in dices
  • 1 large pear peeled and cored in dices
  • 1 tsp vanilla extract
  • 1 lemon juice
  • 1/2 tsp cinnamon powder (optional)

Pecan and walnut crumble

  • 30 gr chopped pecan nuts
  • 30 gr chopped walnuts
  • 40 gr all purpose flour
  • 50 gr brown sugar
  • 30 gr softened butter
  • 60 gr milk

Instructions

Before

  1. Make a stew with the apples and pears by cooking them together with the lemon juice in a saucepan until tender. You can also add the cinnamon here. Once the are done, set aside.
  2. Preheat the oven at 180C (350F);
  3. Prepare a square 9 inch mold by greasing it with butter.

For the nut crumble

  1. Mix together all the ingredients with your hands: flour, brown sugar, nuts and butter until the texture is crumbly;
  2. Set aside to assemble the cake.

Make the cake

  1. Cream together the butter with the sugar, you can either do it by hand with a spatula (harder) or using a stand mixer with the paddle attached (around 2 min) until the mixture is light in color and fluffy;
  2. Add the eggs one by one and mix well with each addition;
  3. Add the vanilla extract and the oil and mix well;
  4. Incorporate the flour and milk in a few steps and continue mixing until all comes as an homogeneous mixture.

  6. Pour the batter into the pan and take it to the oven about 20 min;
  7. After the time has passed remove from the oven and evenly spread the remaining apples and pears over the cake;
  8. On top of it spread the nut crumble;
  9. Take it to the oven for another 25 to 30 min
  10. Remove from the oven, wait for the cake to cool down a bit and un-mold and let it completely cool on a rack or enjoy it warm!!
